Paradise Fuji Apple Chicken Salad

When I dip.. You dip.. We dip

I’m all about dipping; Skinny dipping, double dipping, but most importantly, dipping my fork in the salad dressing before each bite in order to use less. Pretty good idea if I don’t say so myself! Not only does it minimize the calories, but the leftovers stay fresher, longer!

Word to the wise/clumsy: Put the dressing container close to the salad bowl to prevent “cleanup on aisle all-over-the-place!”

I have business lunch meetings oft’ and need a few healthier, on-the-go options for my semi-sophisticated pallet (i.e. Cafe Rio, Paradise Bakery, Zupas, Panera and so forth).

My personal favorite is a hearty Paradise Café salad. Much to their chagrin, I personalize and manipulate the Fuji Apple Chicken Salad to my own liking. Here are the specs!

 Fuji Apple Chicken Salad

Green leaf lettuce, chopped bite size

Red onion, sliced very thin ( I don’t like onions so I swap this for their corn and jicama schtuff)

Diced tomatoes

Grilled chicken, very thinly sliced

Pecans, halved or chopped to preference

Dehydrated apple slices or a fresh fuji apple, very thinly sliced (I buy mine from Trader Joes)

Gorgonzola cheese, Feta (My personal favorite) or any other cheese of your preference

If you are making it at home here is DIY version of the dressing! Paradise is stingy on the toppings at times and they jip me on the pecans. I suggest you make it at home and generously load up with all the fixins!

Honey Apple Vinaigrette 

1/4 cup apple juice concentrate
1 tablespoon apple cider vinegar
1 tablespoon white balsamic vinegar
1/2 teaspoon Dijon mustard
1/8 teaspoon white pepper
1/8 garlic powder
pinch of salt
1/3 cup light flavored olive oil
1-3 tablespoons honey, adjust to taste (the original version is a very sweet dressing, but I actually preferred it a bit more tart)

Whisk together all ingredients except the honey. Taste the dressing and add honey as your taste buds direct. Pour the dressing into a jar and refrigerate until ready to serve. Enjoy!
