The Food
The food was a spread of berries, freshly plucked sweet peas and cherries, salmon burgers and an avocado, corn salsa that will blow your briefs to the moon! (figuratively of course) We used this salsa to top our burgers to keep it low on the high sugar that condiments pack per TBSP!
With a family full of celiac sufferers, lactose intolerants and recovering sugaraholics we try to make healthy fairing food that tantalizes taste buds.
Bean, avocado and corn salsa
1 Can of Corn niblets, drained
1 Can of Black eyed peas, drained, rinsed
1 Bunch of cilantro, chopped
1 Bunch of green onions, chopped
4-5 Tomatoes, chopped
4-5 Avocados, sliced into squares (add VERY last)Dressing:
3 TBS. Vinegar
2 TBS. Oil (not olive)
2 tsp. Garlic salt
2 tsp. Tobasco sauce
